Only 6k STR, but I do 15k damage against unarmored opponents.
His AC is 57.
The ELBow I am using is An Elven Long Bow [6x350] (+40).
Is something different about AC that I didn't know about before?

He's got Ethereal Chains. Most likely your Strength goes to below 0 causing the low damage.
Also, AC does a straight damage reduction equivalent to the AC in addition to the percent it does.
