If you have a skill like bloodlust whose level is affected by trained st and bonuses to st, is it affected during battle by giant strength?

Bloodlust is 0.60 when it is at 20% of your actual ST. This can even change per round in battle ;)

So if you are using GS you should ensure that your bloodlust is trained for more than you need.
And if you don't have a full amount of bloodlust trained, say .50 or something you could actually have full bloodlust in the battle if somebody hits you with EC or an exbow.....
I guess that all makes sense...;)
