Special Chocolate Truffle look-a-like cookies ^_^

Here are the necessary ingredients for the cookies:

* 1 c. butter
* 1/2 c. powdered sugar
* 1 1/2 tsp. vanilla
* 1 oz. (1 square) unsweetened baking chocolate
* 2 1/4 c. flower
* 1/4 tsp. salt
* 2 T. cocoa
* 1/4 c. powdered sugar(this will be used for a different purpose)

Here is how to make the cookies:

1. Preheat your oven to 375 degrees Fahrenheit
2. Mix everything but the 2 T. cocoa and 1/4 c. powdered sugar together in a bowl.
3. Shape the dough into one inch spheres(ball shape).
4. Bake the cookies for 10-12 minutes. Let them cool when you take them out of the oven.
5. Mix the 2 T. cocoa and 1/4 c. powdered sugar in a small bowl. Roll the cookies in the powder.

I know nothing about cookies other than they are tasty. But the mighty internet does :P. Attest to the might of google!!

Chocolate-Apricot Filled Flakies

For the filling:
6 ounces semi-sweet chocolate
1/2 cup apricot preserves

For the dough:
1/2 cup milk
3 cups flour
1 tablespoon sugar
1/2 teaspoon salt
1 cup shortening, cold
1 package active dry yeast
1 egg, beaten
1 teaspoon grated lemon zest
powdered sugar

Preheat oven to 350 F. Place chocolate in the top of a double boiler over hot water and melt. Stir in apricot preserves. Remove from heat and allow to cool. Scald the milk and allow to cool until lukewarm. Combine flour, sugar, and salt. Cut in the shortening until the mixture resembles coarse crumbs. Add the yeast to the warm milk. Stir milk, egg, and lemon zest into the flour mixture. Divide into four parts. Sprinkle powdered sugar lightly onto work surface. Turn out one portion of dough onto work surface, sprinkle dough lightly with powdered sugar and roll to 1/8" thickness. Cut into rounds with 2 1/2" diameter round cutter. Place 1/2 teaspoon filling in the center of each round and fold over. Seal edges. Bake 12-15 minutes. Dust with powdered sugar.

My mother's specialty (ok, she really has so many specialties at this point that they're not really "specialties"... but I digress)-- Buckeyes! I hate the team, but the cookie is amazing and here's how to make them!

You must have:

1/2 lb of butter
1 lb (~2 cups) of peanut butter (no nuts!)
1 lb (~4 cups) of powdered sugar
1 tbsp of vanilla
1 and a half packages (8 oz) of graham crackers (which need to be crushed into a fine grain)
1/4 cake paraffin
12 oz of semi-sweet chocolate (in chip form, or otherwise)

Mix the butter, peanut butter (no nuts!), powdered sugar, and vanilla together in a nice sized bowl or vat of some kind. Add the graham cracker crumbs and mix it all together. You can even use your hands at this point! Fun times...

At this point you need to melt the chocolate. Put the 1/4 cake paraffin on your warm and cozy double boiler. Important!-- make sure you take the boiling water off the fire before adding the chocolate to the paraffin. Water in the mixture is a no-no. Add the chocolate. No water. Melted glory.

Now form the odd, and greasy, mess into little balls the size of a walnut. You can get creative here. Making them the size of oranges isn't usually a great idea, but sometimes it's refreshing to be a little saucy. You can either take a tooth pick and stab your newly created balls for a clean dip in your chocolate sauce, or just use your hands. Like I do. It's more fun to lick the chocolate off your fingers. And I don't even like chocolate! Except on buckeyes...

Place on a cookie sheet with a slice of the old wax paper for minimal sticking action and you're well on your way to culinary heaven. And, if you made them the size of walnuts, you'll have approximately 100 delightful creations. Also, if you're especially anxious to try your treats, you can place them in the refrigerator to speed up the chocolate hardening process.

Voila. Buckeyes. Enjoy.

These are not cookies, or hot chocolate, but it's a great meal for the family on a cold winter night.

Pho - like saying FUR without the R
(Noodle Soup of Many Flavors)

Rice Noodles - 2lb
Beef, Pork, Chicken, Shrimp, Squid - Any Combo +1lb
Water - 3/4 Gallon
Green Onion - 5 Stalks
Red Chili Pepper(not bell pepper) - 5
Celantro - As much as Green Onion
Lime - 1
Fried Garlic/ Chili Pepper Paste
Beef or Pork Paste
Monosodium
Black Pepper
Fish Sauce
Chili Sauce
Soy Sauce

1) Boil 1/2 Gallon of Water in a pot with the meat of choice to make a broth (Keep heat on low once meat is cooked).

2) Boil the other 1/4 Gallon of Water in a seperate pot for cooking the noodles (Keep heat on low once meat is cooked).

3) Dice the Green Onion and Celantro into pieces half the size of bite sized Snickers. Cut the Lime into 8 wedges.

4) Chop the Chili Peppers into very small pieces.

5) Take your assorted meats and chop them into bite sized slices.

6) Put your chopped ingredients onto a serving plate that is easily accessable.

7) Your Pastes, Sauces, Monosodium, and Black Pepper will probably come in canisters. Set those together next to the chopped ingredients.

8) Now take the amount of Rice noodles that you wish to have, and cook them in a strainer inside of the plain Water Pot.

9) Once cooked, strain the noodles and put them in a bowl.

10) Add the ingredients you wish to have. For beginners, I would use a small bit of the broth first to experiment with before you make you actual bowl.

11) Will serve about 5 people.

My Preference (Spicy)
- Noodles - 1/3lb
- Celantro - Table Spoon
- Green Onion - Table Spoon
- Beef Paste - 1/2 Table Spoon
- Chili/ Garlic Paste - 1/4 Table Spoon
- Fish Sauce - Table Spoon
- Soy Sauce - Table Spoon
- Chili Sauce - Table Spoon
- Lime - 1 Slice
- Layer the top with beef and shrimp
- Black Pepper - 1/2 Table Spoon (I like alot)
- Monosodium - A small pinch
- Chili Pepper - Tea Spoon

Now once I have all that done, I add the broth to cover all my ingredients completely. It is cheap, easy to make, tastes to your liking, and very filling. It will warm you up from head to toe, so keep some napkins and cold water to cool the tongue.
Best while steaming hot.

1 cup granulated sugar
1 cup powdered sugar
1 cup butter or margarine
1 cup cooking oil
2 eggs
4 1/2 cups flour
1 teaspoon cream of tartar
1 teaspoon vanilla
1 teaspoon baking soda




1. Mix granulated sugar, powdered sugar, butter, and cooking oil together.
2. Add eggs, mix again.
3. Add flour, cream of tartar, vanilla, and baking soda mix together.
4. Drop small balls of dough on cookie sheet.
5. Pour a small amount of granulated sugar in a bowl.
6. Dip bottom of a cup in the small bowl of sugar.
7. Then slightly flatten dough with the bottom of cup.
8. Bake in oven at 375 degrees.
9. Bake for about 10-12 minutes or until lightly brown.

These are so good melt right in your mouth

Also if you like almonds can crush some up and put in the dough.

Long Live the eternal Snickerdoodle!

1/2 cup butter (1 stick), softened
1/2 cup granulated sugar
1/3 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 1/2 cups flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon cream of tartar

Topping
2 tablespoons granulated sugar
1 teaspoon cinnamon

1. In a large bowl, cream together the butter and sugars with an electric mixer on high speed. Add the egg and vanilla and beat until smooth.
2. In another bowl, combine the flour, salt, baking soda, and cream of tartar.
3. Pour the dry ingredients into the wet ingredients and mix well.
4. Preheat oven to 300 degrees while you let the dough rest for 30 to 60 minutes in the refrigerator.
5. In a small bowl, combine the sugar with the cinnamon for the topping.
6. Take about 2 1/2 tablespoons of the dough and roll it into a ball. Roll this dough in the cinnamon/sugar mixture and press it onto an ungreased cookie sheet. Repeat for the remaining cookies.
7. Bake the cookies for 12 to 14 minutes and no more. The cookies may seem undercooked, but will continue to develop after they are removed from the oven. When the cookies have cooled they should be soft and chewy in the middle.
Makes 16 to 18 cookies.

Organization of Young Females involved in Reconnaissance who sell cookies during Springtime(usually) Shortbread clones:

1/2 cup butter-flavored shortening
1 cup powdered sugar
1/2 teaspoon vanilla
1/4 teaspoon salt
2 tablespoons beaten egg
1/2 teaspoon baking soda
2 tablespoons buttermilk
1 1/2 cups all-purpose flour (plus an extra 1/4 cup reserved for
rolling)
1/8 teaspoon baking powder

1. In a large mixing bowl, cream together the shortening, sugar, vanilla, and salt with an electric mixer.
2. Add the egg and beat mixture until it's fluffy. Add the baking soda and mix for about 20 seconds, then add the buttermilk and mix for an additional 30 seconds.
3. In another bowl, combine the flour and baking powder.
4. Pour dry ingredients into wet ingredients and mix well with an electric mixer until flour is incorporated.
5. Roll the dough into a ball, cover it with plastic wrap, and chill it for 1 hour.
6. Preheat oven to 325 degrees.
7. Roll dough out on a well-floured surface to 1/8-inch thick and
punch out cookies with a 1 1/2 to 2-inch cutter (a medium-size spice bottle lid works well). Arrange cookies on an ungreased cookie sheet.
8. Bake for 12 to 15 minutes or until golden brown.
Makes 60 cookies.

Thinmint clones (same organization as above):

Chocolate Cookie Wafers
1 18.25-ounce package Betty Crocker chocolate fudge cake mix
3 tablespoons shortening, melted
1/2 cup cake flour, measured then sifted
1 egg
3 tablespoons water
Non-stick cooking spray

Coating
3 12-ounce bags semi-sweet chocolate chips
3/4 teaspoon peppermint extract
6 tablespoons shortening

1. Combine the cookie ingredients in a large bowl, adding the water a little bit at a time until the dough forms. Cover and chill for 2 hours.
2. Preheat oven to 350 degrees.
3. On a lightly floured surface, roll out a portion of the dough to just under 1/16 of an inch thick. To cut, use a lid from a spice container with a 1 1/2-inch diameter (Schilling brand is good.) Arrange the cut dough rounds on a cookie sheet that is sprayed with a light coating on non-stick spray. Bake for 10 minutes. Remove the wafers from the oven and cool completely.
4. Combine chocolate chips with peppermint extract and shortening in a large microwave - safe glass or ceramic bow. Heat on 50 percent power for 2 minutes, stir gently, then heat for an addition minute. Stir once again, and if chocolate is not a smooth consistency, continue to zap in microwave in 30-second intervals
until smooth.
5. Use a fork to dip each wafer in the chocolate, tap the fork on the edge of the bowl so that the excess chocolate runs off, and
then place the cookies side-by-side on a wax paper - lined baking
sheet. Refrigerate until firm.

Makes 108 cookies.
