So white light is all the colors of light combined, and the color black is the absence of light, so what's grey?
my thinking is that grey might have the colors cyan, magenta and yellow (btw red and blue are actually shades of cyan and magenta, not vise versa), but not all the ranges of color, just most/some of them.

Yeah, there are lots of ways to come at grey...
If you want to play around, get into any graphics or web page editor that has a "color picker"...whether it be the bars, the circle, etc... Use something that has the RGB numbers (0 to 255), and then pick greys. See how the RGB values change... Should be an informative exercise...

When you're painting you just mix black and white.
In printing - my wife works in publishing - they also mix black and white. Sometimes, as a tone, sometimes a certain density of black dots on white background.

In Photoshop apparently you do Green + Magenta to get grey.

You can do the same in paint.
Click on colors and then edit colors, there you can choose to add a color.
White is 255 on all RGB values, black is 0 and grey is the middle of it, 128.
In fact, if all RGB are the same, you get a shade of grey and depending on how close you are to 0 or 255, it gets darker or lighter.
