If you have a dd mage that just throws spells and you equip a bow or sword of some sort, will the weapon mask out the spells?(no more spells just weapon damage), or does it all add up? ex. blablabla 1 cast fireball, blablabla 1 shoots blablabla 2.

Spells always cast over the use of weapon.
So if you had a minion with a HUGE weapon, a million strength and dexterity and a base Fireball, it'd cast the fireball and only the fireball =)

But, you can use a bow or another ranged weapon alongside a melee-only DD, and ranged weapon would shoot in ranged rounds, then the spell takes over in melee (and HoC-enabled ranged round).
Not saying you should do that, it's actually quite counter-productive in most cases, but you can do it if you really want to.
