Imagine that you moved to the US from the UK and upon arriving discover that Bacon and Sausage as you know and love them do not exist. Then imagine after over a year of living without these essentials you discover a source. American bacon and sausages are not the same, or in my opinion as good. Imagine who happy i am:)

All sorts of cuts from the pig are called bacon in the UK. What most people think of when they think of a bacon cut in the UK comes from the back. An American slice of bacon on the other hand is from the belly. In the UK we would call that streaky bacon. It's the cut with the most fat.
Ah, bacon sandwich for breakfast, two slices of white bread, some butter and some ketchup, and three slices of back Bacon, smoked preferably. Yum.
I've eaten back bacon, and I can tell you that belly bacon is by far the best part of the pig. As for sausages, bratwurst alone should be enough to keep you happy and healthy.

I live in Sheboygan, so I'm one of the few Americans to have had REAL bratwurst. And damn, it's good.

Notice how you need the butter to fatten it up and make it good? =) Fatty bacon makes the perfect simple sandwich, a BLT. Bacon provides the fat, salt, and meat; tomato the water; lettuce the crunch.
