I used to like Kittie a lot. My tastes have changed a lot recently, though. I think the only metal I still like these days is In Flames. I haven't really paid much attention to any other bands.

Any obscure (or not so obscure) power/symphonic European metal band.
Personally, I like:
Nightwish -- I know Zog doesn't agree with me, but man, can Tarja sing. And Tuomas can write like a beast.
Dragonland -- Good band, IMO.
Rhapsody of Fire -- Epic.
Helloween -- Classic.
Metallica -- Kind of a no-brainer... MoP and One are especially good.
Sonata Arctica -- If you can stand the singing, go for it.
Within Temptation -- Not too loud, but pretty calming. Lyrics are nice, too.
Kamelot -- The only good U.S. power metal band. Listen to their albums "Epica" and "The Black Halo" (in that order); they tell a pretty powerful story.
Epica -- Stole their name from one of Kamelot's albums, but still, pretty good band.
Apocalyptica -- Metallica. On cellos.

I listen to WT a lot.
I started listening when I still liked metal. I didn't add them because I don't really consider them to be metal any more. That's my personal opinion, I know they technically are, but yeah.
Hmm... CDWow still haven't shipped my copy of The Black Symphony...
