Would a 1 handed weapon eg: (50x1000) do the same amount of damage as a 2 handed weapon (50x1000) ?
And more generally... Would a weapon (50x50) do the same amount of damage as a weapon (100x0) ?

On average, each hit should do the same amount if being used by the same minion against the same opposing minion, although the 1 handed is likely to do more in total due to have a 50% higher base chance-to-hit therefore likely landing more successful blows.
And more generally... Would a weapon (50x50) do the same amount of damage as a weapon (100x0) ?
Discounting the other factors this will not happen as 50x50=2500 while 100x1(because it cannot be 0) only equals 100.

Ok reword the last part to be (50x51) and (100x1), but I get what you mean.
Is that true then, so a 50x10 [=500] weapon would (theoretically) equal a 100x5 [=500] ?

That should be true. But before you conclude which weapon is better for you, there are a few other things to consider... like two handed weapons being cheaper to upgrade (generally) so their Item NW is lower than a one-handed weapon that is upgraded to an equivalent level.
Then there is also the penalties accrued by wielding a two-handed weapon with shields, ect.

Ummm it is not quite the same. Just using a compound bow and an ELB comparison, multiplying their X times their base does NOT give you accurate representation of which is stronger.
When my ELB and Compound were supposedly "equal" where their number came out very close, the ELB did like 10k more damage. There was no giant strength shift and I don't use archery or belegs....

1: yes they would do the same damage since both base damage and modifier are the same
2: this is NOT true because of these reasons
a: a weapon 100x0 wouldn't exist since base = x1
b: it isn't a multiplier but a modifier, it isn't 50*50 = 2500.
