Could you go like 2 minion team with max FF and just train ALB/PL/AMF?? Letting your FF do the dmg?

Yes, but a big Dispel Magic (or many smaller ones) would just kill the Ablative shield (as you've spread the exp with AS, PL, and AMF.
And one hit would kill it.

Well he could RoS the AS guy and just put an AoI on the mage and you should be alright to drop the PL altogether.

You would probably be better off with the standard Single Mage with Fireball and a Steel Familiar.
Fireball by itself is generally kind of weak, due to spread damage, however in combination with MM it is quite strong.
