Stilton and Austrian Smoked - but not necessarily together.
Stilton eaten with sweet biscuits(digestives) and apple or grapes with a large glass of vintage port.

Simple swiss
at the current time i would have to say feta, on a greens salad or greek pasta salad with some kalamata olives it is delicious.
Dude, what about that on a pizza with chicken! There's the really nice greek restaurant where I go to college, they go this pizza that's got that exact stuff with like a white pesto sauce. It's phenomenal!
ooh, that is awesome as well. i had a place that would do that exact pizza but also with the olives and sun-dried tomatoes. that is one of the best pizzas ever!
is it too early for lunch?
add a good ipa beer to that pizza and you have a perfect meal.

I like the hard salty cheeses, shaved thin, or shredded and broiled on sourdough, usually Romano. But lately I've been into Cotija, just eaten as is.

For cooking: scamoza or pecorino romano.
Out of hand: Plain old Cheddar.
Red wine: Blue or Brie
White wine: Kefalotyri
I'm not a one cheese man.
Cotija is my secret lasagna ingredient
