Dude, what about that on a pizza with chicken! There's the really nice greek restaurant where I go to college, they go this pizza that's got that exact stuff with like a white pesto sauce. It's phenomenal!

I like the hard salty cheeses, shaved thin, or shredded and broiled on sourdough, usually Romano. But lately I've been into Cotija, just eaten as is.
